Sunday Roast

I've come very late to the air fryer party. I guess you could say I've been a fryer denier. Something about the word "fryer" put me off and I'd dismissed them as just another kitchen gadget that does everything bar walking the dog.


But recently, our Lab-loving fellow campers (you know who you are!) convinced me of the merits of including an air fryer on the list of must-have caravan accessories with stories of sumptuous lamb roasts, tender salmon filets and freshly baked bread. It was actually the home-made, still warm scones with jam and cream that got me over the line.


Of all things in my kitchen back home, I miss my oven the most. And the dishwasher. I really miss the dishwasher. So while standing in a long line at the post office I spotted an air fryer among the odd assortment of stuff they sell in post offices these days (they'd do better focussing on their parcel delivery services if you ask me, but that's a story for another day) and decided to take one home. I had no idea where I'd store the thing but I was hankering for a Sunday roast and belly wins out over brain any day of the week.


As you can probably guess I'm now a convert and have experimented with quite a few meals without ruining too many. My favourite was salt and pepper calamari, freshly caught and coated that day by the local fish coop, which I gobbled too quickly to photograph.


So here's a photo of my Sunday roast pork with roast potatoes, cauliflower, broccolini and gravy. And yes, the crackling was superb. I have to say so myself because the Labs didn't get any.


Less than an hour from start to finish, including prep, cooking, photographing and eating. Thanks Georgina and Kevin, you've changed my game!

BTW I have been cooking with my daughter’s small, pot-sized air-fryer. Like you, I am a convert - roast spuds in 10 mins!! Fantastic!

Yep, spuds are good. I attempted a roast chook the other day which was an epic fail, but Google has informed me of where I went wrong.

Hey there Barb and labs, Ive been remiss in keeping up but have heard from Woodsie that you’re a very happy camper in your travels. It’s inspiring to hear, and to read your posts. I do have a question: how does the Penguin cope in the rain? leaks? saturation? Breezy in high winds?

Hey Gill, yep, we’re a happy little band of travellers! So far Loretta’s held up well in all kinds of weather. The worst wind was in Nyngan all those months ago with gusts up to 70kph. It wasn’t fun but I had her anchored well down with guy ropes. She’s held up well in the rain too - no leaks so far (touch wood!)
